Patterns, Predictions, and Actions by Moritz Hardt and Benjamin Recht is an excellent book focusing on the mathematics behind machine learning algorithms and the role of data sets in the model development process. In addition, the authors include extensive theorem-proving sections, which makes it an excellent resource for mathematicians.
